Making Potato Rolls- How They Turned Out and Opinions of the Recipe
In a previous post, I talked about how my mixer had died and that I purchased a replacement for it. The mixer problems forced me to reconsider posting about my baking progress for a while. Now that I have a new mixer and it works very well, I decided to start talking about some of the foods I made using it again.
While browsing my copy of The King Arthur Baking Company’s All-Purpose Baker’s Companion, I discovered a recipe called Amish Potato Rolls. It looked similar to an old and nearly completely lost potato bread recipe I grew up eating (And not liking very much because it was always over baked, dry, and the top of the buns were brunt.) I always thought the recipe was good, but the baking of it wasn’t. Since the original recipe was destroyed and can not be found anymore, I decided to give this new recipe a try and see if I liked it.
After a few practice batches, the rolls I make ended up looking like this…



They aren’t as perfectly sized as the rolls I ate growing up, but I really like these more. They are soft, moist, and, best of all, are not over baked because I control the cooking time! The recipe takes three raises to make, which is kind of what I remember it taking to make the old recipe. As you can probably imagine, I really like these rolls more than the rolls I grew up eating!
There are a handful of drawbacks to making these rolls. One of the major ones is that these potato rolls are dense. Because of this, they will be very filling. Because of the amount of time needed to raise the rolls and how many raises are needed, making these rolls are time consuming. Fortunately, they are not difficult to make. Just time consuming. And the final drawback is that these rolls require eggs. Right now there is a nationwide shortage of eggs, which means making this recipe will be difficult if buying eggs isn’t possible.
Even though there are some drawbacks, I still recommend this recipe. It doesn’t require a lot of specific skills to make it. Just time. Lots and lots of time. So, if you make these rolls, please plan accordingly!
